We stand at the collision of earth and ocean, where ancient volcanic bedrock meets the pristine waters of the Bass Strait. We do not complicate what nature has perfected. From the mineral rich soils of the hinterland to the churning depths of the coast, our menu is a curated map of Tasmania’s wildest ingredients.
